SOUTHWESTERN DIP, the ingredients:
ROASTED PEPPER TZATZIKI
- 4 cups Tzatziki sauce
follow the Tzatziki video)
- 2 roasted, peeled and seeded red peppers
- 1 roasted, peeled and seeded green pepper (follow pepper roasting procedure from 5 spice chicken video)
BBQ LIME BLACK BEANS
- 4 cups dried black beans (soaked for 6 hours)
- 1 small tomato, diced
- 1 cup BBQ sauce (mixed with cajun sauce and sambal)
- 2 tbs minced garlic
- 5 ounces peppers and onions
SPICY HUMMUS
8 cups chickpeas, drained and rinsed
1/2 cup minced garlic
2 tbs tahini paste
3 chipotle chile's
6-8 oz olive oil
zest of 1 lemon and 1 lime
juice of 2 lemons and 2 limes
4 corn tortillas
