Flour dressing
- 100g flour
- 1 egg white
- champagne
- salt
- parsley
- coriander
- 4 sole filets
- salt & pepper
- flour
- boiling oil
- salt & pepper
- fresh mint
- orange zeste
Execution :
SOLE FILET RECIPE, instructions :
1 - Flour dressing:
Mix the 100g of flour, with the egg white and a bit of champagne. Once the mix is homogenous and liquid, add salt, chopped parsley and coriander.
2 - Sole filet preparation
Put salt & pepper on the sole filet, sprinkle flour, dip them in the flour dressing and boil the sole filet for 1 minute in oil.
3 - Presentation
Sprinkle fresh mint and orange zeste on the sole filet
It's an easy sole filet recipe!
