Salmon Goat Cheese Rotolini, the ingredients:
4 oz Smoked Salmon
5 oz Goat Cheese
2 Hardboiled Eggs ChoppedEgg
3 tbsp Horseradish
8 oz Jar of Caperberries
Salt
Pepper
Extra Virgin Olive Oil
Toothpicks
Execution :
Salmon Goat Cheese Rotolini, execution:
Place 2 eggs in a pot of water turn on high heat. When water comes to a rapid boil the eggs are cooked. Let the eggs cool in the refrigerator or under cold water. Once eggs are cool remove shell and chop. With a large spoon mix together egg, goat cheese and horseradish. Add salt and fresh black pepper to taste. Scoop mixture with a teaspoon and shape into rounds.
Cut salmon into 1 inch wide strips and wrap around goat cheese mixture. Fasten in place with a tooth pick and crown with caperberry. Plate up and drizzle with EVOO.
