Ingredients :

2 lbs cipollini onions
20-30 whole garlic cloves peeled
1/2 cup olive oil
salt and pepper
Execution :

1. Slice the tip off the onions. Leave the papery skins and root end intact
2. Wrap the onions, garlic, olive oil, salt and pepper up tightly in tin foil
3. Roast 1 1/2 hours at 350 degrees F.
This is meant to be a "soffritto" like condiment and an ingredient in many other recipes
