FRUIT BRUSCHETTA, the ingredients
10 Peaches
6 Apricots
1/2 cup +2 Tbs Brown Sugar
8 oz Almond Cream Sherry
Bread Product
Vanilla Bean Gelato
Execution :
FRUIT BRUSCHETTA,
Peel then dice all fruits
Cut bread into small ovals
Either grill or bake them
Place mixture into strainer
Reserve liquid
In saute pan :
Add the rest of the sherry
Brown sugar and reserved cooking liquid
Reduce to make simple syrup for garnish
