Preheat oven at 300f
Cut tomatoes into quarters and place on a large cookie sheet. With a brush dab each tomato with olive oil. Sprinkle with salt pepper and oregano. Cook for 1 hour 15 minutes or until tomatoes are roasted. Let cool at room temperature. Cut fresh mozzarella into 1 inch cubes and skewer with tomatoes and basil. Drizzle with olive oil and salt and pepper to taste.
