Spinach and Ricotta Ravioli

RICOTTA RAVIOLI, ingredients : 500g Fresh pasta dough 1 kg fresh spinach, boiled, drained 350g ricotta, drained 100g pecorino cheese from Sardinia 2 eggs 1 pinch of nutmeg salt, pepper
Execution :
RICOTTA RAVIOLI, instructions In a food processor combine spinach, ricotta, cheese and eggs. Pulse several times until pureed. Adjust seasoning with salt, pepper and nutmeg. Fill a pastry bag with the spinach-ricotta mix and form ricotta ravioli with the pre-rolled pasta. Seal the ricotta ravioli with egg-wash (1 egg+1 tablespoon of water).
