Turkey with Chestnuts

Ingredients :
CHRISTMAS CHESTNUT TURKEY, ingredients : 1 turkey (about 6 kilos) 1 kg fresh italian sausage 500g pancetta 100g green olives 200g bolied, peeled chestnuts salt+pepper
Execution :
CHRISTMAS CHESTNUT TURKEY, instructions : Preheat the oven at 200c. Chop olives, chestnuts and sausage, mix well, make a fist size meatball and stuff the turkey. Cover the christmas chestnut turkey with thick slices of pancetta and roast uncovered for about 2 hrs. Remove the pancetta from the christmas chestnut turkey and and finish cooking until internal temperature registers about 70c. Let rest, loosely covered with foil for about 20 minutes then serve the christmas chestnut turkey.
