How long have you been cooking and what actually gave you the taste for cooking ?
Walter Sawan: I have been cooking since I was 15, I was a dishwasher at a greek family restaurant, when the married cooks got into a married couple fight..... one of them left and then I had to work the dish pit and the salad station. ha ha and the rest is History....

What's your favorite dish and why ?
Walter Sawan: For me I don't think I would be able to offer an answer on this one. I haven't tried everything yet so I can't tell you yet.

Your greatest culinary memory ?
Walter Sawan: Being the Sous Chef for chef Ron Kalaniuk. He introduced me to the brilliant world of Southwestern and Cajun cooking.

What recipe or dish (or starter, salad, desert…) are you best known for ?
Walter Sawan: I'd have to say I am most known for my Jack Daniel's Teriyaki Steaks, and Salmon, Or any of my spice rubs
A restaurant you would like to recommend and the reasons why ?
Walter Sawan: THE ELBOW ROOM IN VANCOUVER BC CANADA!!!! best place ever to get breakfast and lunch on Davie and just off Granville. But you had better finish your plate or else......

What do you like and dislike about the region/town/village you live in ?
Walter Sawan: I'm not a huge fan of Penticton B.C. Canada. The vast amounts of wine are pretty great. seeing as how this is the NAPA Valley of Canada. Other then that people here have the palates of a cow's backside and fear change....



What are your favorite works or heroes (author or book, film director/actor or movie, paintings or painters ,etc.)?
Walter Sawan: I, like most cooks/chef's I know, LOVE MUSIC!!! I have been to a fair amount of concerts in my time but my all time favourtive artists are the boys from TooL.

A place for holidays to recommend and the reasons why ?
Walter Sawan: As much as I am being confusing. I would have to say Penticton B.C. Canada is an unbelievable vacation spot during the summer. With wine tours and many many many vineyards to visit within 40 mins in either direction . With a Beach on both sides of town it really is a great place...... TO VISIT!!!!



What do you consider the most important qualities in a man ?
Walter Sawan: Standing behind yourself 100%

And in a woman ?
Walter Sawan: Compassion, quirkiness, Boldness, and of course I have found the one I want and she is everything and more...

Your crasiest dream ?
Walter Sawan: As a short term dream, I am going to try and go out to Europe in 3 years and Cook in 4 countries In one year, for some broader cooking experience.

What natural talent do you wish you had ?
Walter Sawan: I believe that everyone is more then capable of doing and achieving anything they want to. I have always been great at everything I have ever tried, becuase of this belief.

Walter Sawan: Scallops N°2 by Daniel Rose from France. I tried this and it was Very tasty.
